This morning Jason and I managed to get up around 5:45 am to get our run in. It was a very pleasant run actually. It was about 61 degrees, low humidity, light breeze, and clear skies as the sun started to come up. We did about 3.5 miles at a fairly good clip, but not pushing it too hard - it was early and all. It was definitely a nicer way to start the day rather than slamming head long into it grumbling all the while.

It turned out to be an absolutely gorgeous today. I wish I could have gone for a second run just to be outside. Instead, I did 30 minutes of Kick, Punch and Crunch at lunch (to wake myself up more than anything). I won't lie, it was VERY difficult forcing myself to go back to the office. My lounge chair was just taunting me.

Thai Tuesday
We bought some sugar snap peas the other day that needed to be used. I had thought about a stir-fry using the rest of the Basic Seitan that I made. But Jason had stir fry for lunch. Oh, and we had some open coconut milk to use. So, I made Thai Seitan and Veggies with Rice.

Thai Seitan and Veggies with Rice
Ingredients:
Basic seitan (or you can use your favorite brand or recipe)
1 can lite coconut milk
2-3 tbsp red curry paste (depending on heat level)
1 tsp agave nectar
2-3 carrots, chopped
1/2 yellow onion, diced
1/2 red bell pepper, diced
1 cup sugar snap peas
Basil (Thai basil if you have)
Red chili flakes (optional depending on desired heat level)
1 cup cooked brown rice (barley or rice noodles would work well too)

Directions:
In large non-stick skillet, saute carrots, onion, and bell peppers until soft. Add in coconut milk, curry paste, agave nectar, and basil. Let reduce then stir in seitan and sugar snap peas and let cook until heated through.

I bought a new brand of curry paste (Patak's) and am much happier with it. Definitely has more heat to it, and that's what I like. What's great about this recipe is that you can easily change out the veggies and even protein source. Another great flavor option would be to add in natural peanut butter.

  3. I love the kick punch and crunch. I may do that one tomorrow! Sugar snap peas are one of my favorites, but I don't eat them often because my husband is hit or miss with them. Dinner looks delicious!

    SO jealous of your run this AM! Mostly cuz my PM run was rained out. BOO! I did Imax 3 in your honor since you did that one recently, it was top of mind and all ;) Holy calves are on fire!

  10. I am glad your weather is improving. We are back in another 3 plus days of rain. Thursday we should get some sun and I will be hitting the pavement if we do.

  13. I always think about how tough it must be to go home in the middle of the day and then leave again. I'm sure there are many things nice about it, but I would have a hard time going back to work.

    I love starting my day with exercise. It's such a great way to make up. Your Thai looks AMAZING! I wish my husband liked more ethnic foods. If I make something Thai, it's usually for nights when he's out of town or for lunches.

    man, i've never tried seitan before. i think it's time i tried it. i love tempeh and tofu. seitan seems to be the next step in vegetarian eating for me to try!

I Run to Feel Alive

I actually sort of planned my running days this week just so I could participate this year. I didn't get to run last year and didn't even know about it the year before. But running has become such an integral part of my life and who I am, that I couldn't miss this year. Basically, I run to feel alive . It calms me, it helps me work through life, it's often a reason to get out of bed. No matter how tough a run is, it makes you feel ... period. My plan was to get in 5 miles (got in 5.5 actually). It was about 10 degrees warmer this morning and definitely more humid. That always makes for a tougher run. We decided to take a different route today. Vacation Day 2 - Running, Reading, Relaxing

Running This morning I woke up a bit before 7 am. Of course, we had gone to sleep by 9....on vacation no less. I had thought I might try for an outdoor run, but the temps were already a humid 83 degrees by 8 am. So, I took my run to the treadmill. I had the Food Network to keep me occupied for a pretty decent 5 mile run. Running and watching tv isn't so bad ;-) I did 3 miles, then 4 1:00 athletic intervals then finished up another mile to round it out to and even 5. After stretching and rolling (yep, brought my TriggerPoint kit ), we packed up the cooler with lunch and headed down to the beach. Not a bad way to start the day if you ask me. Beach Time & Stair Cardio We set up our little umbrella camp and proceeded to just relax. I was excited to start one of the books I brought along with me: Alice Sebold's The Almost Moon . I've read her memoir, Lucky , and her first work of fiction, The Lovely Bones . . We were out for a few hours before taking a break.
