NuNaturals Giveaway & Orange Chocolate Cookie Balls

I don't often post baking recipes. Actually, I don't really bake that often. But when the kind people from NuNaturals contacted me about trying out two new flavors (orange and lemon), I knew I needed to get into the kitchen.

The basis for this recipe came from Kristina at SpaBettie. You should check out her variety of iterations of this recipe too. But, the base? It's a quick, easy, vegan and gluten-free cookie base.

When I thought of the orange flavoring, I thought about Ghiradelli Dark & Orange squares. I am not really a chocolate person, but will admit those are pretty darn good.



Orange Chocolate Cookie Balls
Ingredients:
1 can chickpeas - rinsed, drained, peeled
1/2 cup natural peanut butter (I used chunky)
1/2 tsp cinnamon
1 dropper NuNaturals Stevia
1 1/2 - 2 droppers NuNaturals Orange Stevia (depending on taste preference)
Zest of 1 orange
2 tsp fresh squeezed orange juice
2 tbsp brown rice flour
1/4 to 1/3 cup vegan carob chips or dark chocolate chips

Directions:
Preheat oven to 375 degrees.

Using a food processor, blend together chickpeas, peanut butter, stevia, cinnamon, orange zest, and orange juice until it starts to form a ball. Add in the rice flour and continue to blend until well-incorporated.

Transfer to mixing bowl and stir in the carob or chocolate chips.

Form into balls and place on a prepared baking sheet. Bake approximately 20 minutes.
These turned out far better than I even imagined. They aren't overly sweet and the orange is just a nice subtle, fragrant touch.

Vacation Day 2 - Running, Reading, Relaxing

Running This morning I woke up a bit before 7 am. Of course, we had gone to sleep by 9....on vacation no less. I had thought I might try for an outdoor run, but the temps were already a humid 83 degrees by 8 am. So, I took my run to the treadmill. I had the Food Network to keep me occupied for a pretty decent 5 mile run. Running and watching tv isn't so bad ;-) I did 3 miles, then 4 1:00 athletic intervals then finished up another mile to round it out to and even 5. After stretching and rolling (yep, brought my TriggerPoint kit ), we packed up the cooler with lunch and headed down to the beach. Not a bad way to start the day if you ask me. Beach Time & Stair Cardio We set up our little umbrella camp and proceeded to just relax. I was excited to start one of the books I brought along with me: Alice Sebold's The Almost Moon . I've read her memoir, Lucky , and her first work of fiction, The Lovely Bones . . We were out for a few hours before taking a break.
